Grain Free Banana Pancakes

Ingredients
  1. 2 large bananas (7 ounces)
  2. 2 eggs
  3. 1/8th tsp. baking powder
  4. A few dashes of cinnamon
Directions
  1. In a small bowl, whisk together eggs and baking soda and set aside.
  2. In a separate bowl, use the back of a fork to mash your bananas until they are broken down but still a little bit chunky (this helps keep the pancakes fluffy).
  3. Pour the egg mixture into the banana mixture and add a few dashes of cinnamon. Stir to combine.
  4. Heat a small non-stick pan over a medium high heat and coat wit coconut oil, butter or cooking spray. Drop about 2 tbsp. of batter per pancake in the pan (these pancakes can be tricky to flip so keeping them small is super important).
  5. Cook just until the edges of the pancakes become translucent and the center has set up. Flip and cook for another minute or until the pancakes are cooked through.
  6. Continue until you are done with all of the batter. Enjoy!

Broccoli and Cheese Breakfast Casserole

Ingredients
  1. 5 cups of fresh broccoli florets
  2. 1 tsp garlic powder
  3. 1 tbsp curry powder
  4. 12 organic eggs
  5. 12 organic egg whites (or 1 ½ cups)
  6. ¼ cup Almond Milkd or organic milk
  7. Salt and pepper to taste
  8. ¾ cup of grated mozzarella
  9. ¾ cup of grated sharp cheddar
Directions
  1. Preheat over to 375. Spray a glass 10x14 casserole dish with cooking spray.
  2. Cut broccoli into small florets and steam for two minutes or until just tender. Toss broccoli with garlic powder, salt and curry powder. Set aside.
  3. Combine eggs, egg whites, milk, and black pepper in a large bowl and beat with a fork or a whisk until all of the ingredients are well combined.
  4. Layer seasoned broccoli on the bottom of the casserole dish and evenly sprinkle the cheese over the broccoli. Pour the eggs over the broccoli and cheese and use a fork to make sure that the broccoli is evenly distributed through out the eggs.
  5. Bake for about 30 minutes or until the top is slightly browned and the eggs are cooked through. Enjoy!

High-Protein Blueberry Pancakes

Ingredients
  1. 1 cup of rolled Oats
  2. 6 organic egg whites (3/4 cup)
  3. 1 cup of cottage cheese
  4. ½ tsp of vanilla extract
  5. ½ tsp cinnamon
  6. 2 tsp of agave nectar
  7. ½ cup of blueberries
Directions
  1. Combine all of the ingredients (except for the blueberries) in a blender and blend until everything is well combined (about 30 seconds). You want to have a nice smooth “pancake batter-like” consistency.
  2. Gently stir in the blueberries.
  3. Pre heat a non-stick pan or griddle over a medium heat and lightly coat with cooking spray. Scoop ¼ cup of the batter on to the hot pan. Repeat, adding as many pancakes as you can without crowding the pan. Cook for about three minutes or until the edges start to bubble. Flip the pancakes and cook for another two minutes or until golden brown.
  4. Top with organic maple syrup, fruit, or our favorite – almond butter!

Ingredients
  1. Cooking spray
  2. 1 cup chopped broccoli
  3. 2 large organic eggs, beaten
  4. 2 tablespoons feta cheese, crumbled
  5. 1/4 teaspoon dried dill
  6. 2 pieces of sprouted bread, toasted
Directions
  1. Heat a nonstick skillet over medium heat. Coat pan with cooking spray. Add broccoli, and cook 3 minutes.
  2. Combine egg, feta, and dill in a small bowl. Add egg mixture to pan. Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast.
